This will be doable once we get https://github.com/LemmyNet/lemmy-instance-stats in a cronjob somewhere. We'll have a time data point with the stats.json at that point in time.

I think a csv output might be more useful for this, then we could directly load it into another program like Libre Office Calc to generate graphs.
